Beautiful Mozzarella Tomato Essence & Heritage Tomato Salsa.


Recipe of the month - The Dolphin House Brazzerie


This recipe came to us from the Dolphin Brazzerie located in Plymouth, a former waterfront warehouse overlooking Sutton Harbour Marina. This Brazzerie only use ethically sourced, local produce that is freshly cooked to order. Their talented  Head Chef  Nick Cottrel created this mouth watering dish – I think you would agree it  is  a  perfect meal for a warm summer evening, so why not get stuck in and give this recipe a go?


Local Mozzarella Coated and Fried served with Tomato Essence and Heritage Tomato Salsa.

Tomato Essence:
1250g cherry tomatoes, ripe and washed

½ stick celery, washed and finely chopped

½ shallot, peeled and finely chopped

¼ fennel bulb, finely chopped

½ clove garlic, peeled and sliced

½ sprig thyme leaves, chopped

10g basil, leaves, chopped

2 tsp sea salt

2 tsp sugar (optional) (*2)

1 pinch cayenne pepper

4 drops Tabasco

4 drops Worcestershire sauce


Mix all ingredients together and pulse in a blender until crushed.

Place the mixture into muslin and hang over a bowl in the refrigerator.

Once all the liquid has dripped out, chill the liquid until needed.


Deep Fried Mozzarella:

Mozzarella Balls





Portion Mozzarella. Whisk Egg. Coat the mozzarella in the flour, then coat in egg then coat in breadcrumbs.

Deep Fry until golden.

Heritage Tomato Salsa:

4 Heritage Tomatoes diced.

1 Shallot finely diced

2 Cloves of Garlic finely diced



Olive Oil

Mix all ingredients together. Season to taste.
